This issue is seen with the non-English environment as the localized strings for BETWEEN and NOT BETWEEN operators are used for comparison with respective English strings.
Workaround
If you edit the query manually in Query Editor, you can specify 'between' or 'not between' and save it to search using that query.

2) An advanced search query is neither built and nor saved if BETWEEN or NOT BETWEEN operators are selected for the date type attribute. While editing the query with these operators, only one date input field is displayed instead of two which is expected.
Below screenshot from a Japanese environment shows that despite selecting 'between' option for Mail Date in Search Builder, it only shows single date option.

These issues occur when 'between' or 'not between' is selected for the date related options Mail Date, Modified Date or Retention Expiry Date.
These issues have been confirmed in the Japanese environment, and may also occur in other non-English environments.
